Looking for a way to finish off those hard boiled Easter eggs? Try this, egg salad tea sandwiches. They are super easy to make, healthy, and reusable.

Egg Salad Tea Sandwiches
Ingredients
- 8 large eggs, boiled and peeled
- 1/4 cup mayonnaise
- 1/4 teaspoon kosher salt
- 1/8 teaspoon black pepper
- 12 slices white sandwich bread
- 1 small diced cucumber
Directions
- Grate the eggs using a box grater.
- In a large bowl, combine the eggs, mayonnaise, cucumber, salt, and pepper. Cover and refrigerate for at about 30 minutes.
- Place 6 of the bread slices on a work surface. Divide the egg salad evenly among the slices and top with the remaining bread.
- Trim the crusts and cut into quarters.
